Today’s guest post is brought to you by our travel friend Samantha, a study-abroad student in Lima, Peru. She shares the top foods she’s fallen in love with in Peru.

1)   Ceviche

Ceviche is a South American dish that originated here in Peru. It features raw fish cured in lime or lemon juice and spiced with Ají (Peruvian peppers). Ceviche is served with camote (sweet potatoes) and  choclo (large-kernaled Andean corn)and sweet red onions.

Regular Ceviche is only fish, but there are many types of Ceviche including Ceviche Mixto, which includes calamari, scallops, little octopi tenticles, and shrimp.  Pictured is Ceviche Mixto with raw scallops. The orange part tastes just like the ocean,and is considered by some to be quite delicious. Personally, I think it must be an acquired taste.

2)   Frutas Peruanas

There are so many fruits common here in Peru that are not found or super hard to find in the States. Fruits are cheap and delicious here, and there are many I have tried and many still to taste. My favorite so far has been Maracuyá  (pictured below), which are super sour when eaten eaten plain but delicious all the same. Typically used for juice, maracuyá is a fantastically-tangy fruit.

3)   Chicha Morada

Chicha Morada is a sweet, juice-like beverage made from purple corn. That’s right, PURPLE CORN! It is served in almost every restaurant and it costs only a little more than water.

Chicha Morada is made by boiling the corn with pineapple and spices. Sugar and lime juice is commonly added, and it’s quite delicious.

 4)  Huancaína sauce

 Made with Peruvian yellow peppers, this cheesy sauce is used as a sauce for everything from potatoes and rice to chicken and eggs. It is best when made fresh, but it also is sold as a condiment with other sauces like ketchup and mustard.

I must admit, my first taste of Huancaina sauce came with much trepidation. I have a loathing for mustard, and I must admit, a prejudice towards yellow sauces.  Despite the scary color, this sauce is flavorful and lacks the heat of many of the other chili-based sauces.

5)   Lomo Saltado

Lomo saltado was my first Peruvian dish. It consists of beef sauteed with peppers onions and tomatoes. It is served over fries made from Peruvian yellow potatoes and is usually accompanied by rice.

It’s a filling and savory dish that developed from the mixing of Chinese cooking techniques and Peruvian tastes  in the 19th century when Chinese migrated to Peru. Lomo Saltado is now considered a classic Peruvian dish that every visitor must try.

Choosing which foods to include in this list was so very difficult. I want to briefly mention the runner up dishes that visitors should also make a point to try:

  •  Arroz con mariscos– this is far and away my favorite dish so far. Savory and so delicious it’s rice with seafood.
  • Pisco Sour– this is the national drink of Peru. It’s made with Pisco (a Peruvian liquor made from grapes), egg whites, lime juice and garnished with bitters.
  • Chifa-Peruvian Chinese food – Somewhat similar to Chinese food in other parts of the world, Chifa is very popular and there are many dishes to choose from.
